RICH FONIO SALAD WITH MANGO, GOJI BERRIES AND
CASHEWS

Rich Fonio Salad with Mango, Goji and Cashews. Vegan, Gluten-Free Recipe

INGREDIENTS (6 SERVINGS)

  • 1 cup Fonio
  • 2 cups water
  • ¼ red onion – cut to small cubes
  • 1 cup cherry tomatoes halved
  • ½  Cucumber – cut to small cubes
  • ½ Large mango – cut to small cubes
  • ¼ cup chopped parsley
  • ½ lemon juiced
  • 2 Teaspoons Olive oil
  • ½ cup roasted cashews
  • ½ teaspoon salt
  • Dash of black pepper
  • ¼ cup Goji berries

INSTRUCTIONS

  1. Cook the Fonio:
    In a small pot, combine the Fonio 2 cups of water. Cover and bring to a boil. Reduce heat to low for 1 minute. Turn off the heat. Keep covered for 4 more minutes. Then, remove the lid and fluff with a fork. Set aside to let cool. While the Fonio cooks, prepare the other salad ingredients.
  2. To make this Fonio Salad:
    In a medium bowl, combine all of the other ingredients: onion, cherry tomatoes, cucumber, mango, parsley, goji berries, lemon juice, cashews, olive oil, salt, and pepper.
    When the Fonio has cooled, add it to the bowl. Toss to combine. Taste to adjust seasoning. Enjoy!
