Tip Top Tips

Olive oil:

Can be replaced with any liquid oil.

Choose flat ingredients that will not interfere with the thin rolling of the dough.
whole Walnuts, for example, do not fit here. However, if you dice them, it’s ok.


The ingredients (2 oven pans)
For the basic dough:

  • 2 (240ml) Cups of cooked Fonio (Cuscus) Grain. See below how to cook the FONIO grain.
  • 1/2 (120ml) Cup Olive oil.
  • 1/2 (120ml) Cup of Honey of Dates syrup (add gradually as needed to keep solid mixture.
  • 1/2 (8gr) Teaspoon of salt for upgrades.

Favourite spices: Ginger powder, Chili, Thyme, Oregano, 1/2 Teaspoon each.

Up to 3/4 Cup extra: Pumpkin seeds, Sunflower, Chia, Flax, Sesame seeds or a mix of all.

THE INGREDIENTS TO COOK THE FONIO GRAINS

  • 1 (15gr) Tablespoon olive oil.
  • 1 Cup (240ml)  of FONIO.
  • 1/2 (8gr) Teaspoon of salt.
  • 2+1/2 Cups (600 ml) boiling water to make the bread.

THE PREPARATION

  1. Place all the ingredients, including the cooked FONIO grains, the upgrades you have chosen, in a bowl. Mix to form a uniform mixture.
  2. Divide the mixture into two parts and roll each of them on baking paper.
  3. Cut with a knife into squares of the size you want. Transfer, with the paper, to an oven tray.
  4. Bake in an oven preheated to 180 degrees for about 20 minutes, or until the crackers dry out and harden.
